J(caps)alebi Fafda is a popular traditional Gujarati food combination, especially enjoyed during festivals like Dussehra and Diwali. It pairs two distinct items:

Fafda: A savory, crispy snack made from gram flour (besan) mixed with spices such as black pepper, ajwain, and asafoetida, then deep-fried to a light crunch. It is mildly spiced and has a delicate texture.

About Jalebi Fafda?

Jalebi is sweet made of maid or plain flour in sugar syrup. It is famous across India and said to be inspired from west Asian food where it was called as "Zolabiya" or "Zalabiya."

Fafda is famous Gujrati snack. This crispy snack is made of besan or bengal gram flour with some spices added to it. Fafda is eaten with green chilli and papaya sambharo.

The combination of Jalebi and Fafda was popularised by main character of TV Sitcom "Taarak Mehta Ka Ooltah Chashmah" - Jethalal. He is so found of Jalebi and Fafda that there are so many memes on internet on thier love.

Ingredients

For Making Jalebi Batter

  • ½ cup maida or plain flour
  • ¼ teaspoon baking soda/baking powder
  • 1 teaspoon corn flour or corn starch
  • 1 teaspoon curd
  • pinch of food colour (optional)
  • water as required
  • oil for deep frying
  • 1 teaspoon ghee (optional)

For sugar syrup

  • ¼ cup water
  • 1 cup sugar
  • ¼ teaspoon kesar or saffron strands (optional)
  • pinch of food colour (optional)
  • ¼ teaspoon elachi or cardamom


Preparation for jalebi batter - jalebi recipe

  1. First of all take a bowl and mix maida, corn flour, curd and food color (if using, you can use turmeric instead to give it a color). Use spoon or wired whisk or even hand to mix them throughly.
  2. Add water to above, mix them properly with spoon or wired whisk or hand.
  3. Try to make lumps free batter and keep on mixing them in all directions. Make sure there is not lumps formation, if there stir it again and again. Make the batter even and smooth.
  4. Fill the batter in a clean clothe with one side open or use ready made aviable bottle in market for storing.


Preparation for Sugar Syrup - Jalebi recipe

  1. In a pan mix sugar with water. Add kesar (saffron strands) and elachi (cardamom) to the mixture. You can add food color basically yellow or saffaron, even turmeric will work which provide nice color.
  2. Place the pan on heat. Stir it at regualr interval. Cook it till you get one string consistency in the sugar syrup for for jalebi recipe. Check it with you hand (take out with spoon and let it cool a bit) and turn off the heat if consistency of syrup is ok.



Fry Jalebi - Sweet Jalebi-recipe

  1. Heat oil in a pan over flame. Check the heat of the oil by placing some batter on it. If it comes up, then we are ready to cook or wait for oil to get heated properly.
  2. With the help of bottle or cloths as mentioned above try to to make round shape jalebi in the oil. Make one by one. You may not get proper shape in one go but will learn gradually.
  3. Flip one side to other with the help of tong and cook both the side firmly. Fry jalebi till both the side turn to golden color or dark if food color is added.
  4. Keep the Jalebi aside on tissues or any plate to drain oil from it.
  5. Place the jalebi in sugar syrup and let it soak the syrup.

Fafda Recipe is very easy, you just have to mix all the ingredients and make a dough. Make balls from the douhg and elongate it a long and flat. Take the flaten dough and deep fry it in oil. For Dough:

  • 2 cups besan / bengal gram flour
  • 1/4 teaspoon haldi/turmeric
  • 1/4 teaspoon ajwain / carom seeds
  • 1/4 teaspoon baking soda
  • salt
  • 2 teaspoons oil
  • water

For Frying:

  • oil for deep frying

Fafda Step by Step Recipe

  1. In a bowl mix all the ingredinets - besan ,haldi, ajwain, baking soda with salt as per taste
  2. Now add oil to above and mix then well.
  3. Gradually add water to the mix. Knead them well till the dough become soft and smooth. Knead the dough if it is still not soft is sticky. Add oil to the soft dough coating all over it, rest it for some time.
  4. Take the above dough knead it again and make small ball out of it by dividing it equally.
  5. Take wooden board (can use any thing but prefered), roll the balls into long thin flat strips. Do it carefully without breaking it.
  6. Take fry fan and heat oil at medium flame. Carefully scrape the strips and place in the pan. Deep fry it. Stir occasionally. Fry fafdas for around one or two minutes till it turn golden in color and looks cfrispy. Repeate it wilth all the stips.
